LEMON SQUARES DELUXE - Mattie

LEMON SQUARES DELUXE from Diva Mattie
Served February 2009

CRUST:
2 c. flour
1/2 c. confectioners sugar
1 c. butter (2 sticks)
Mix until it clings together (like pie crust). Press down on ungreased
9"x13" Pyrex dish. Bake at 350 degrees for 25 to 30 minutes or until golden.
Remove from oven.
Combine:
4 eggs, beaten
2 c. sugar
1/3 c. fresh lemon juice
1/4 c. flour
1/2 tsp. baking powder
Mix and pour over baked crust. Return to 350 degree oven and bake 25 to 30
minutes or until golden. Cool and sprinkle with confectioners' sugar. Cut
into squares.

(This is a true American classic...when Mattie emailed me the recipe I took out the tattered recipe I've used since attending a cookie party in the 1970's. Slight differences: my recipe said "butter or margarine", it has 1 whole teaspoon baking powder and the cookies were called Lemon Bars, although we've always cut them in squares.)
