Served for Diva-Annie's April 2008 garden day. Sugar, our friend and one of the original Divas of the Dirt made it for Christmas and canny Annie froze it. If she hadn't told us we never would have known. Guess the description "freezes beautifully" can fit here.
Zucchini bread
3 eggs
2 1/4 cup sugar
1 cup oil
2 zucchini - shredded
3 tsp vanilla
mix all together
in another bowl mix together
3 cup flour
1 tsp salt
1 tsp baking soad
1/4 tsp baking powder
3 tsp cinnamon
mix dry ingredients into wet
Grease and flour 2 large loaf pans (or 4 small) Bake at 350 degress for one hour.
